Ingredients
  

  • 3 cups coconut water
  • 1 1/2 cups fresh pineapple chunks about 1/4-1/3 of a whole pineapple
  • Juice from 1/2 lime
  • Tiny pinch of sea salt optional
  • 1 tbsp honey or agave optional
  • Ice cubes
  • Fresh mint leaves for garnish optional

Method
 

  1. Prep Your Pineapple: Cut off the top and bottom of the pineapple, then slice off the outer skin. Remove any "eyes" and cut the pineapple into chunks.

  3. Option 1 (Easy): Add pineapple chunks to a pitcher with coconut water, squeeze in lime juice, and add a pinch of sea salt (optional). Let it sit in the fridge for 1-2 hours for a refreshing drink.
  4. Option 2 (Smooth): Blend everything together for a slightly pulpy texture with more pineapple flavor.
  5. Option 3 (Fancy): Blend everything and strain through a fine mesh strainer for a smooth, elegant version.
  6. Chill & Serve: Pour the drink into a pitcher with ice cubes. Garnish with fresh mint or lime slices for extra flair. Optionally, freeze pineapple chunks for a slushy texture.

Notes

To store, keep the drink in a glass container with a tight lid in the fridge for 2-3 days. Shake or stir before serving as it may naturally separate.
For a fun twist, try adding a slice of jalapeƱo for a spicy kick, or use frozen pineapple for a slushy consistency.
This recipe is easy to adjust based on your sweetness preference. Skip the honey or agave if you prefer it less sweet.
