Method
 

  1. Prepare your ingredients: cut fresh pineapple if using, and measure out everything.
  2. In a blender, add ice cubes, pineapple chunks, cream of coconut, and Malibu rum.
  3. Blend on low, then increase speed until the texture is smooth and slushy (about 30 seconds).
  4. Taste test: adjust thickness with pineapple juice, sweetness with more cream of coconut, or add lime for balance.
  5. Pour into glasses and garnish with a pineapple wedge, cherry, and umbrella if desired.
  6. Serve immediately and enjoy the tropical vibes!

Notes

Cream of coconut is different from coconut milk or cream – use the sweetened thick kind (e.g., Coco Lopez).
Chill all ingredients beforehand for an extra refreshing drink.
For a fruitier version, swap half the pineapple for mango.
Make-ahead: Combine all ingredients except ice and store in the fridge up to 2 days. Blend with ice when ready.
