Ingredients
  

For the basic pancake bites:
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk whole milk preferred
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
  • Cooking spray or additional butter for greasing
For pancakes and sausage bites variation:
  • 8 oz breakfast sausage links cooked and cut into small pieces
  • Optional mix-ins and toppings:
  • 1/2 cup mini chocolate chips
  • 1/2 cup blueberries fresh or frozen
  • 1/2 cup diced bananas
  • 1/4 cup rainbow sprinkles
  • Maple syrup for serving
  • Powdered sugar for dusting
  • Fresh berries for garnish

Method
 

  1. Preheat your oven to 375°F (190°C) and grease a 24-cup mini muffin tin generously with cooking spray or butter.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt. Make a well in the center.
  3. In another bowl, whisk eggs until frothy. Add milk, melted butter, and vanilla, and whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and fold together gently, being careful not to overmix.
  5. Add any desired mix-ins, like chocolate chips, blueberries, or diced bananas.
  6. Fill each muffin cup 2/3 full with batter. For sausage bites, place a piece of cooked sausage in the center before topping with more batter.
  7. Bake for 10-12 minutes until golden and puffed. A toothpick inserted should come out clean.
  8. Let cool for 2 minutes in the tin, then carefully remove and serve warm with maple syrup or powdered sugar.
