Ingredients
  

  • For the Noodles:
  • 8 oz lo mein or ramen noodles
  • 1 lb ground beef 80/20 preferred
  • 1 onion thinly sliced
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated (or 1 tsp ground ginger)
  • 2-3 green onions chopped
  • 1 bell pepper sliced
  • 2 carrots julienned or shredded
  • 1 tbsp neutral oil for cooking
  • For the Mongolian Sauce:
  • 1/3 cup low sodium soy sauce
  • 3 tbsp brown sugar
  • 1 tbsp hoisin sauce optional
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes optional
  • 1/4 cup water
  • 1 tbsp cornstarch

Equipment

  • Large skillet or wok
  • Pot for boiling noodles

Method
 

  1. Step 1: Prep Everything
  2. Cook the noodles slightly underdone according to package instructions.
  3. Slice vegetables and mix sauce ingredients (except cornstarch + water, mix those separately).
  4. Step 2: Cook the Beef
  5. Heat oil in skillet over medium-high heat.
  6. Add ground beef and cook until no longer pink (5-6 minutes).
  7. Drain excess fat if needed.
  8. Step 3: Add Aromatics & Veggies
  9. Add onions and cook for 2 mins.
  10. Stir in garlic and ginger, cook for 30 seconds.
  11. Add bell pepper and carrots, cook for 2-3 mins until slightly softened.
  12. Step 4: Combine Everything
  13. Pour sauce over beef and veggies.
  14. Add cornstarch slurry.
  15. Simmer 1-2 mins until thickened.
  16. Add noodles and toss everything together.
  17. Top with green onions and serve.

Notes

For spicier noodles, add chili garlic sauce or sriracha.
Use any noodle you have: ramen, spaghetti, udon, or even rice noodles.
Ground turkey or chicken works as a lighter alternative.
Store leftovers up to 3 days; reheat in microwave or stovetop with a splash of water.
