Method
- Harvest or buy lemon balm leaves, rinse them if freshly picked.
- Choose your container, preferably glass for better flavor.
- Gently bruise the leaves by rolling them between your hands or pressing with a wooden spoon.
- Add the lemon balm to your container and pour in the water (cold or hot – not boiling).
Let it steep:
- Cold version: Infuse in the fridge for at least 2 hours or overnight.
- Hot version: Cover and steep for 5–10 minutes.
- Strain (optional) if you prefer a clear drink.
- Add extras like lemon, honey, mint, etc., if desired.
- Taste test and adjust flavor or steep time as needed.
- Serve chilled or warm and enjoy throughout the day.
Notes
Use fresh lemon balm for best results.
Store in the fridge up to 3 days.
Remove leaves after 12 hours to prevent bitterness.
Can be frozen in ice cube trays.
