Ingredients
  

Must-Have Ingredients:
  • 1 –2 handfuls fresh lemon balm leaves about 1–2 cups loosely packed
  • 4 cups filtered or tap water
Optional Add-ins:
  • Lemon slices 1–2 slices
  • Fresh mint leaves a few sprigs
  • Cucumber slices 4–6 thin slices
  • 1 tsp raw honey
  • 1 small piece fresh ginger
  • Ice cubes for serving

Equipment

  • Glass pitcher or mason jar
  • Strainer (optional)
  • Wooden spoon (for bruising herbs)

Method
 

  1. Harvest or buy lemon balm leaves, rinse them if freshly picked.
  2. Choose your container, preferably glass for better flavor.
  3. Gently bruise the leaves by rolling them between your hands or pressing with a wooden spoon.
  4. Add the lemon balm to your container and pour in the water (cold or hot – not boiling).
Let it steep:
  1. Cold version: Infuse in the fridge for at least 2 hours or overnight.
  2. Hot version: Cover and steep for 5–10 minutes.
  3. Strain (optional) if you prefer a clear drink.
  4. Add extras like lemon, honey, mint, etc., if desired.
  5. Taste test and adjust flavor or steep time as needed.
  6. Serve chilled or warm and enjoy throughout the day.

Notes

Use fresh lemon balm for best results.
Store in the fridge up to 3 days.
Remove leaves after 12 hours to prevent bitterness.
Can be frozen in ice cube trays.
