Ingredients

  • 4 cups all-purpose flour plus extra for dusting
  • 1 tablespoon baking powder
  • 2 teaspoons salt
  • 1 tablespoon sugar optional
  • cups warm water
  • ¼ cup milk
  • 2 tablespoons vegetable oil plus extra for frying

Equipment

  • Large mixing bowl
  • Wooden spoon
  • Rolling pin (optional)
  • Heavy pot or deep skillet
  • Tongs or slotted spoon
  • Paper towels

Method

  1. Mix Dry Ingredients – In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. Add Wet Ingredients – Make a well in the center and pour in the warm water, milk, and oil. Stir until a shaggy dough forms.
  3. Knead the Dough – Flour your hands and knead the dough for 3-4 minutes until smooth and elastic.
  4. Rest the Dough – Cover the bowl with a damp towel and let it rest for 30 minutes.
  5. Shape the Fry Bread – Divide the dough into 8 pieces, roll into balls, and flatten into ¼-inch thick discs. Make a small hole in the center of each.
  6. Heat the Oil – In a heavy pot, heat 1-2 inches of oil to 350°F.
  7. Fry to Golden Perfection – Fry each piece for about 2 minutes per side until golden brown.
  8. Drain & Serve – Place fry bread on paper towels to remove excess oil and serve warm with desired toppings.

Notes

For sweeter fry bread, add extra sugar and brush with cinnamon sugar after frying.
For a savory version, add herbs to the dough and serve with garlic butter.
Store leftovers in an airtight container at room temperature for up to 2 days.
Reheat in a 350°F oven for 5-10 minutes for best texture.
