Ingredients
  

  • 4 –6 chicken pieces thighs recommended
  • 1 cup uncooked long grain rice not instant
  • 1 packet Lipton onion soup mix
  • 2 cups chicken broth
  • 1/4 cup 1/2 stick melted butter
  • 1 small onion diced
  • 1 cup sliced mushrooms optional
  • 1/2 cup frozen peas and carrots or mixed veggies
  • Salt and pepper to taste
  • Dried thyme or parsley optional

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Add rice to a 9x13 baking dish. Pour in chicken broth.
  3. Sprinkle the onion soup mix over rice, then add diced onion, mushrooms, and veggies.
  4. Pour melted butter over everything and mix well.
  5. Season chicken with salt and pepper. Place on top of rice mixture.
  6. Cover tightly with foil and bake for 2 hours.
  7. Optional: Uncover and bake an additional 15 minutes to crisp up the chicken skin.
  8. Let rest 5–10 minutes before serving. Enjoy!

Notes

Use thighs for juicier chicken that holds up to long cooking times.
Optional variations: add cream of mushroom soup, shredded cheddar, or hot sauce.
