- Heat water until just below boiling (about 180°F / 82°C).
- Add dried butterfly pea flowers to a teapot or infuser.
- Pour the hot water over the flowers and steep for 5–10 minutes.
- Strain out the flowers.
- Sweeten with honey or sugar if desired.
- Add lemon or lime juice to watch the tea change from blue to purple.
- Serve hot, or chill in the fridge for iced tea.
- Store leftovers in a sealed container in the fridge for up to 3–4 days.
